In her brief time open for business, Maple Grove resident and Sugar and Spice Custom Cakery owner Dawn Olson-Wallerus is making a big impact.
“I’ve always had a love for baking and decorating. I remember doing my oldest daughter’s very first birthday cake – she’ll be 20. It was a Pooh and Tigger – I thought ‘How hard could it be?’ It was in one of those preformed molds,” she said. “Eighteen hours later, I was ready to throw the cakes out the window. I remember telling my husband I would never bake a cake again – but, it was one of those things that stuck.”
A self-taught baker and designer, she prides herself on making edible toppers, hand painting details, and using fresh ingredients in the mix to the toppings. A 16-year resident of Maple Grove, Olson-Wallerus opened her home-based custom cake business in March 2017. Primarily, she has worked in creating special wedding and birthday cakes. Some of the most unique cakes have included designs of pursues, shoes – as well as a brandy bottle.
“You can’t argue with fresh. Does it come with a higher cost? Maybe. But, I don’t have the overhead,” she said.
When working with customers, the design session with their vision is part of the collaborative process, according to Olson-Wallerus. To focus exclusively on her customers, she works on only one order at a time.
“It allows me to personalize my attention to the customer and they don’t become lost in all the other orders. They are getting my all. The process can take several weeks,” she said. “I encourage people to plan ahead.”
As she grows Sugar and Spice Custom Cakery, Olson-Wallerus hopes to possibly open her own bakery in the future.
