Portillo’s Construction, Hiring Continues in Maple Grove

With the building and hiring process underway, Portillo’s received unanimous approval from the Maple Grove City Council for a liquor license (on-sale wine and 3.2% malt liquor license) at the Oct. 2 meeting (video below). The 9,000 square foot restaurant will seat more than 200 guests will feature two drive-thru lanes, seasonal outdoor seating.
During the meeting, Councilmember Phil Leith asked Portillo’s General Manager Paula Britton when they would open.
“We do not have a solid date at this time,” Britton responded, commenting possibly January  "due to staffing…ensuring we’ll have the appropriate amount to deliver the experience to represent Portillo’s in a way that we need to.”
“The applicant flow has not been good at all,” she commented, following a question from Councilmember Karen Jaeger about the hiring process, but stated they were hopeful it would increase once the building was completed. Britton stated they are looking to hire between 160-200 people.
While construction continues, Portillo’s is seeking employees for food production and guest services.
“We are hiring out of a temporary hiring site located at the old Don Pablo’s in Maple Grove, 7887 Elm Creek Blvd N, Maple Grove,” Recruiting Manager Nicole Quinn told Maple Grove Voice. “Hiring takes place Tuesday-Saturday from 10 a.m. – 7 p.m. Our positions will pay up to $13/hour. Portillo’s was founded in 1963 and includes menu items such as hot dogs, Italian beef sandwiches, char-grilled burgers, salads, ribs, and dessert in addition to catering.
As of the beginning of 2017, 46 Portillo’s restaurants were operating in California, Indiana, Arizona, Florida and Wisconsin. Portillo’s opened their first Minnesota location in Woodbury in early July.
